In the summer and early fall, I love making this bread as a special treat. I have worked out hard and deserve some yummy pleasure now and then. The best part about this recipe is you can substitute apples for the zucchini and get a very good apple bread as well.
1 1/2 cups flour
1 1/2 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp ground nutmeg
1 1/2 cups of zucchini (1 cup zuchini I like lots of zucchini)
1/4 cup cooking oil or applesauce
1/4 tsp finely shredded lemon peel
1/2 cup walnuts or pecans (optional)
Grease pan, in medium bowl combine flour, cinnamon, baking soda, baking powder, salt, and nutmeg.
In another bowl mix sugar, shredded zucchini, oil or applesauce, egg, and lemon peel. Add to dry mixture mix till moistened add nuts. Spoon into greased bread pan bake at 350, 50 minutes or until toothpick comes out clean. Cool in pan on wire rack for 10 min. Remove loaf from pan, and let it cool, then serve and eat, Wrap it up for later. this makes 1 loaf. I have found it a very easy recipe, and my family eats it as fast as I can make it. This recipe freezes really well too.
