Chicken Bean And Spinach Soup





This is one of the best recipes I have found on the net to cook in the fall or on a cool day. I love soups for a rainy fall day. This recipe is healthy, gluten free and delicious with a great italian spice taste.

2 tbs olive oil

1 small chopped onion

1 chopped green pepper

1 pd Chicken Tenders

1/2 tsp dried Oregano

1/2 tsp basil

1/2 tsp paprika

1 carrot small cubes

1 small tomato chopped/diced/stewed

1 can kidney beans (drained)

3 cups fresh spinach

4 garlic cloves

4 cups chicken broth

2 cups water

1/2 tsp oregano

1/2 tsp basil

salt to taste

Use a pot and put in oil, sautee’ onions and green peppers for 1 minute. Remove from pan. Add cubed chicken, add basil, ¬†oregano, and paprika, cook untill brown on both sides. Add onions, green bell peppers,chopped carrots, kidney beans, tomato’s, broth and water, bring to boil then simmer 15-20 minutes until the carrots are cooked. Add the rest of the seasonings basil, oregano, and salt to taste and serve, makes 10 servings.
